If you’re a fan of Starbucks copycat drinks like I am, then you’ll be excited to try this new Cinnamon Dolce Latte recipe. It is super easy to make.

What is a Cinnamon Dolce?

A Starbucks a Cinnamon Dolce Latte is a hot drink made with steamed milk, espresso, cinnamon dolce syrup and whipped cream. A cinnamon dolce topping is also sprinkled on top.

Our homemade version recreates the same flavors using coffee and cinnamon simple syrup. And YES, I realize that a “latte” technically uses espresso. However, as I mentioned when I shared my gingerbread latte recipe, I don’t have an espresso machine. I refuse to sacrifice the counter space or the moola. 🙂

How to Make a Cinnamon Dolce Latte

Are you ready to make a cozy cup of cinnamon dolce latte? Here’s a quick look at how to do it. Be sure to scroll down to the recipe card for detailed instructions.

  • Make cinnamon simple syrup. You can do this 30 minutes before you want to make your latte, or you can do it in advance. I usually make it on the weekend and then keep a jar of the cinnamon dolce syrup in the fridge for easy lattes during the week.
  • Brew coffee. Make your favorite brand of coffee according to your preferences.
  • Warm milk. Heat the milk in a small pot on the stove over low heat, or you can warm it in the microwave. You want it to be hot but not scalding. If you have a frother, you can froth the milk before adding it to your drink.
  • Assemble your latte. Pour 2 tablespoons of cinnamon syrup into a mug. Add coffee + hot milk.
  • Taste. Adjust the sweetness as desired.
  • Serve. Add whipped cream on top and finish with a few pinches of ground cinnamon.

Ingredients

Cinnamon Simple Syrup

  • 2 cups water
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 4 cinnamon sticks
  • 2 teaspoons pure vanilla extract

Cinnamon Dolce Latte

  • 2 – 2 ½ tablespoons cinnamon syrup, depending on how sweet you want your coffee to be.
  • 1 cup coffee
  • ½ cup hot milk, steamed and frothed if you like, you can also use half and half.
  • Sweetener of choice, optional, to taste.
  • Whipped cream, for serving, be generous.
  • Ground cinnamon, sprinkled on top, to taste.

Instructions

Make The Cinnamon Simple Syrup

  • Combine water, sugars and cinnamon. In a small saucepan, combine the water, both sugars and the cinnamon sticks.
  • Boil for 5 min. Bring the mixture to a boil over medium-high heat and cook for 5 minutes, until the mixture has thickened somewhat and is a bit syrup-like.
  • Cool. Allow the simple syrup to cool for 30 minutes.
  • Remove the cinnamon and add vanilla. Remove the cinnamon sticks. Stir in the vanilla.
  • Store. Pour into a small airtight container like a lidded mason jar and store in the fridge for up to 1 month.

Make Your Cinnamon Dolce Latte

  • Brew coffee. Make your favorite brand of coffee according to your preferences.
  • Warm milk. Heat the milk in a small pot on the stove over low heat, or you can warm it in the microwave. You want it to be hot but not scalding. If you have a frother, you can froth the milk before adding it to your drink.
  • Assemble your latte. Pour 2 tablespoons* of cinnamon syrup into an 15oz mug. Add 1 cup of coffee on top. Pour the warmed milk on top. Taste and adjust the sweetness as desired. Add a generous amount of whipped cream on top and garnish with a few pinches of ground cinnamon.
